Fish Stewed Brown

Ingredients
- fish
- 1 onion
- 1 cup water
- mushroom ketchup or powder
- cayenne pepper
- salt
- nutmeg
- lemon juice
- flour
- 1 glass port wine
- truffles or mushrooms
- oil
Instructions
- Fry the fish (soles, salmon slices, halibut, or plaice) until light brown. In a separate pan, brown an onion in a little oil. Add a cup of water, mushroom ketchup or powder, cayenne pepper, salt, nutmeg, and lemon juice to the browned onion.
- Place the fried fish into a stew-pan with this mixture and simmer gently until cooked through. Remove the fish and set aside.
- Thicken the gravy with a little browned flour, stirring well. Stir in a glass of port wine. If desired, add a few truffles or mushrooms for improvement.
- Return the fish to the pan or serve with the finished sauce poured over.
