Preparation for Cutlets of Fowl or Veal

Ingredients
- flour
- a little salad oil
- 2 eggs
- a little white pepper
- to taste salt
- a little nutmeg
- cutlets of fowl or veal
- lemon
- parsley
Instructions
- Whisk together flour, salad oil, eggs, white pepper, salt, and nutmeg until you have a smooth batter. Turn the cutlets well in this mixture to coat. Fry them a light brown in hot fat.
- After the cutlets have fried, add the fresh parsley to the hot pan—it will crisp speedily. Drain the parsley on absorbent cloth to prevent it from becoming greasy.
- Garnish the cutlets with slices of lemon and the crisped parsley.
