Fish Salad

  1. Prepare the salad dressing by whisking together the yolks of three hard boiled eggs with mustard and a little salt. Carefully add the cream and four tablespoonsful of vinegar, working all ingredients together smoothly until well combined.
  2. Cut the cold dressed fish into small pieces and combine with half a pint of small salad and the lettuce cut small. Add the boiled onions (which should be tender and mild) and a few truffles thinly sliced. If desired, include a little cucumber mixed through.
  3. Pour the salad dressing over the fish mixture and arrange it into a shape that is high in the centre. Garnish the top with hard egg slices. Arrange the trimmed whites of the boiled eggs in small heaps around the dish as additional garnish.
