Kinoko-Tamago-Yaki (Shrimp Omelette)

Ingredients
- 4 eggs
- 0.5 cupful shrimp meat
- 0.5 cupful syou sauce
- goma-seed oil
Instructions
- Beat the eggs together with half a cupful of syou sauce.
- Have four or five small frying pans ready and heat them.
- Wipe each hot pan with paper soaked in goma-seed oil.
- Pour an equal quantity of the egg mixture into each pan.
- Quickly scatter the finely chopped shrimp meat into each pan, dividing it evenly.
- Fry slowly for four minutes.
- To brown both sides at once as the Japanese do, place burning charcoal in a tin plate and lay it on top of the omelette on the stove.
- Serve very hot in special omelette dishes.
