Ordinary Blinchiki (Thin Pancakes)

Ingredients
- egg yolks
- tsp salt
- tsp sugar
- spoon butter
- glasses milk
- glasses wheat flour
- eggs (whole, incl. 2 whipped whites)
- funt unsalted lard (shpik)
- funt butter (for frying)
Instructions
- Grind 2 yolks with 1/2 tsp salt, 1/2 tsp sugar and 1/2 spoon soft butter; thin gradually with 3 glasses of milk (about 1 bottle).
- Pour this little by little, stirring constantly, into 2 glasses of flour; mix smooth and strain if needed.
- Fold in 2 whipped egg whites.
- Fry as in the note, browning on one side only. Yields about 20 pancakes. May also be made on water without eggs or butter.
