Ingredients
- cold poultry, meat, or fish
- minced mushrooms
- herbs
- parsley
- grated lemon peel
- minced anchovies
- beaten eggs
- bread crumbs or pounded vermicelli
- fat or oil
Instructions
- Pound any cold poultry, meat, or fish into a delicate forcemeat. Vary the flavor according to taste: minced mushrooms, herbs, parsley, and grated lemon peel suit poultry and veal; use minced anchovies instead of mushrooms when making fish croquettes.
- Form the mixture into balls or oval shapes the size of small eggs. Dip them into beaten eggs, then thickly sprinkle with bread crumbs or pounded vermicelli. Fry until a handsome brown.
