Instructions

  1. Pound any cold poultry, meat, or fish into a delicate forcemeat. Vary the flavor according to taste: minced mushrooms, herbs, parsley, and grated lemon peel suit poultry and veal; use minced anchovies instead of mushrooms when making fish croquettes.
  2. Form the mixture into balls or oval shapes the size of small eggs. Dip them into beaten eggs, then thickly sprinkle with bread crumbs or pounded vermicelli. Fry until a handsome brown.
