Instructions

  1. Simmer the milk in a very clean saucepan with the lemon-peel and bay leaf. Sweeten the milk to taste. Strain the milk through a sieve before proceeding. Pass the beaten egg yolks and whites through a sieve as well. While the milk is gently boiling, slowly add the strained beaten eggs, stirring constantly until the custard thickens. Remove from the fire immediately when thickened, but continue stirring until the custard cools completely.
  2. Alternative method: The mixture may be baked in small cups instead of stovetop cooking. Bake for approximately a quarter of an hour if using this method.
