Egg Marmalade

Ingredients

Instructions

  1. Clarify the sugar in half a pint of water over gentle heat until it becomes a thick syrup. While clarifying, add the pounded blanched almonds. Allow the mixture to cool.
  2. Gently stir in the egg yolks that have been beaten and passed through a sieve. Stir continually in the same direction with great care.
  3. When well mixed, place the mixture over a slow fire and stir constantly until it thickens, taking care to prevent burning. Add vanilla if desired.
