Egg Marmalade

Ingredients
- 1 pound sugar
- 0.5 pint water
- 1 ounce sweet almonds
- 20 egg yolks
- vanilla
Instructions
- Clarify the sugar in half a pint of water over gentle heat until it becomes a thick syrup. While clarifying, add the pounded blanched almonds. Allow the mixture to cool.
- Gently stir in the egg yolks that have been beaten and passed through a sieve. Stir continually in the same direction with great care.
- When well mixed, place the mixture over a slow fire and stir constantly until it thickens, taking care to prevent burning. Add vanilla if desired.
