Instructions

  1. Chop the lettuces, spinach, chervil, celery, carrots, and onions. Put them on the fire with half a pound of butter and let them fry until slightly browned. Season with a little salt, sifted white sugar, and white pepper.
  2. Stew all gently in five pints of boiling water for about two and a half hours.
  3. Just before serving, thicken the soup by mixing the beaten yolks of four eggs with a little of the hot soup first, then stir this mixture into the remainder of the soup.
