Soup Maigre

Ingredients
- 3 whole lettuces
- 1 large handful spinach
- chervil
- 1 whole head of celery
- 2–3 whole carrots
- 4 whole onions
- 0.5 pound butter
- salt
- sifted white sugar
- white pepper
- 5 pints water
- 4 whole egg yolks
Instructions
- Chop the lettuces, spinach, chervil, celery, carrots, and onions. Put them on the fire with half a pound of butter and let them fry until slightly browned. Season with a little salt, sifted white sugar, and white pepper.
- Stew all gently in five pints of boiling water for about two and a half hours.
- Just before serving, thicken the soup by mixing the beaten yolks of four eggs with a little of the hot soup first, then stir this mixture into the remainder of the soup.
