Fried Chicken (Chinese Style)

  1. Clean a young spring chicken and cut it into small pieces.
  2. Fry the chicken pieces to a golden brown in hot, sweet lard.
  3. Boil the chicken giblets until tender.
  4. Chop the boiled giblets very fine and return them to their cooking liquid.
  5. Add one tablespoonful of syou and half an onion chopped fine to the giblet liquid.
  6. Boil the gravy mixture for ten minutes.
  7. Thicken the gravy with a teaspoonful of cornstarch or rice flour.
  8. Pour the gravy over the fried chicken and serve hot with rice.
