Fried Chicken (Chinese Style)

Ingredients
- 2.5 pounds chicken
- 2 tablespoonfuls sweet lard
- 1 tablespoonful syou
- 0.5 onion
- 1 teaspoonful corn starch or Quong Sang Chong
- 1 teaspoonful salt
Instructions
- Clean a young spring chicken and cut it into small pieces.
- Fry the chicken pieces to a golden brown in hot, sweet lard.
- Boil the chicken giblets until tender.
- Chop the boiled giblets very fine and return them to their cooking liquid.
- Add one tablespoonful of syou and half an onion chopped fine to the giblet liquid.
- Boil the gravy mixture for ten minutes.
- Thicken the gravy with a teaspoonful of cornstarch or rice flour.
- Pour the gravy over the fried chicken and serve hot with rice.
