  1. Make the paste: combine biscuit powder, a little brown sugar, grated lemon peel, eggs, and warmed fresh butter into a stiff paste.
  2. Prepare the filling: chop four apples finely, blanch and chop a quarter pound of sweet almonds, combine with half a pound of stoned raisins, a little grated nutmeg, and half a pound of coarse brown sugar. Add a glass of white wine or brandy to the filling ingredients and mix together.
  3. Cook the filling: place the mixed fruit and spice ingredients on a slow fire to simmer for half an hour, then set in a dish to cool.
  4. Assemble and bake: form the paste into small dumplings, fill each with the cooled fruit mixture, and place on a baking sheet. Pour over a syrup made from brown sugar and water, flavored with lemon juice.
  5. Bake until golden.
