Buckwheat Blini, Another Way

Ingredients

Instructions

  1. Slake 1 glass buckwheat flour with 1 glass cold water, scald with 3 1/2 glasses boiling water, mix, cool.
  2. Add 3-6 zolotnik dry yeast, set in a warm place, let rise.
  3. Beat with a paddle, add salt, sugar and 3 glasses fine wheat flour, knead, let rise again.
  4. Without stirring, transfer and bake on pans as in the note; serve with butter, smetana and caviar. Yields 25.
