  1. Warm the butter over the fire with a little milk. Combine it in a pan with the flour, eggs, finely pounded sweet almonds, and yeast. Beat these ingredients well together into a light paste and set it before the fire to rise.
  2. Butter the inside of a baking pan and fill it with alternate layers of the paste and of pounded almonds, sugar, citron, and cinnamon.
  3. Bake until done. While the cake is still hot, make holes through it with a small silver skewer, taking care not to break it. Pour clarified sugar over the cake until it is perfectly soaked through.
