Shiro Uri (Stewed Squash)

Ingredients

Instructions

  1. Peel the squash.
  2. Boil in salted water for twenty minutes.
  3. Remove from the boiling water.
  4. Allow the cooked squash to simmer in boiling syou sauce for five minutes longer.
  5. Alternatively, to stuff: take cold meat or fish and chop it very fine.
  6. Mix the chopped meat or fish with two tablespoonfuls of miso, two tablespoonfuls of syou, salt, pepper, and spices.
  7. If fish is used instead of meat, add the juice of a lemon to the mixture.
  8. Fill the center of the squash with the stuffing.
