Timbale de Maccaroni

Instructions

  1. Boil the maccaroni in water until it swells slightly and becomes soft enough to cut. Cut it into short pieces about two inches in length.
  2. Grease a mould and stick the maccaroni pieces closely together all over the interior surface of the mould. This will require patience.
  3. Fill the hollow space in the center with a fricassee of chicken, sweetbreads, or whatever meat or filling is preferred.
  4. Close the mould carefully and boil it.
  5. Serve with rich white sauce offered separately on the side, rather than poured over the timbale, as pouring the sauce would spoil the honeycomb appearance of the maccaroni, which is very pretty.
