Cold Pickled Fish

Ingredients

Instructions

  1. Wash the fish, then wipe dry and lay it in an earthen dish.
  2. Mix together one pint of vinegar and one pint of water.
  3. When the mixture is boiling, pour it over the fish.
  4. Cut up four red peppers, removing the seeds.
  5. Sprinkle the salt and sugar over the fish.
  6. Lay in the peppers.
  7. Cover tight and put away for two hours.
  8. Drain off all vinegar and water.
  9. Serve with bamboo shoots, rice, or any kind of vegetable.
