Celery Soup

Ingredients

• 1 funt potato
• 3/4 funt root vegetables
• 1 bunch bunch of greens
• 1 onion
• 3 parsley
• 3 celery
• 1 handful dried celery greens
• 1/2 stakan rice or pearl barley
• 1/2 lemon
• 3/4 stakan sour cream (smetana)

Instructions

1. Cook and strain a broth from potato, onion and a bunch of greens.
2. Finish as in No. 72 (celery soup with rice/pearl barley, lemon and sour cream).
3. Optionally serve the cooked potato in the soup, reducing the barley to ¼ glass.
