Lychee Chicken

Ingredients

Instructions

  1. Cut the fresh young chicken into small pieces and rub well with salt.
  2. Fry two tablespoonfuls of sweet lard to a very light brown in a pot.
  3. Add two tablespoonfuls of syou and cover tight.
  4. Simmer for half an hour.
  5. Peel and stone a quart of lychee nuts.
  6. Add the lychee nuts to the chicken with the minced onion, and cook slowly for twenty-six minutes.
  7. Serve with rice.
