Lychee Chicken

Ingredients
- 2 pounds fresh young chicken
- 1 teaspoon salt
- 1 quart lychee nuts
- 2 tablespoons syou
- 1/2 small onion
- 2 tablespoons sweet lard
Instructions
- Cut the fresh young chicken into small pieces and rub well with salt.
- Fry two tablespoonfuls of sweet lard to a very light brown in a pot.
- Add two tablespoonfuls of syou and cover tight.
- Simmer for half an hour.
- Peel and stone a quart of lychee nuts.
- Add the lychee nuts to the chicken with the minced onion, and cook slowly for twenty-six minutes.
- Serve with rice.
