Mushroom Omelette

Ingredients
- 1 tablespoon lard
- 1/4 onion
- 1/2 pound fresh mushrooms
- 1 tablespoon syou
- 4 eggs
- 1/4 teaspoon salt
Instructions
- Heat a tablespoon of sweet lard in a pan over moderate heat.
- Fry a quarter of an onion until light brown.
- Cut half a pound of fresh mushrooms very fine.
- Cook the mushrooms in the pan for five minutes.
- Beat four eggs together with one tablespoon of syou.
- Pour the egg mixture into the pan with the mushrooms and onion.
- Cook for five minutes without stirring, but gently shake the pan to prevent burning.
- Fold the omelette over, or slip it from the pan onto a warm dish set over hot water.
