Mushroom Omelette

Ingredients

Instructions

  1. Heat a tablespoon of sweet lard in a pan over moderate heat.
  2. Fry a quarter of an onion until light brown.
  3. Cut half a pound of fresh mushrooms very fine.
  4. Cook the mushrooms in the pan for five minutes.
  5. Beat four eggs together with one tablespoon of syou.
  6. Pour the egg mixture into the pan with the mushrooms and onion.
  7. Cook for five minutes without stirring, but gently shake the pan to prevent burning.
  8. Fold the omelette over, or slip it from the pan onto a warm dish set over hot water.
