Instructions

  1. Put the fresh butter and cold water into a saucepan. Once the butter is melted, stir in the flour while the pan is on the fire, mixing thoroughly. Transfer the mixture to a dish to cool.
  2. When cooled, add the four well-beaten eggs and stir to combine. Butter some small cups and half-fill them with the batter.
  3. Bake in a quick oven until puffed and golden. Serve warm with clarified sugar.
