Ingredients
- 1 pound common salt
- 0.5 ounce saltpetre
- 1 ounce coarse brown sugar

- 8 ounces sugar
- 0.5 ounce saltpetre
- 2 quarts water
Instructions
- There are two methods for salting beef:
- Dry Method: Mix together one pound of common salt, half an ounce of saltpetre, and one ounce of coarse brown sugar. Rub the meat well with this mixture daily for a fortnight or less, depending on the weather and the degree of salt desired.
- Brine Method: Boil eight ounces of salt, eight ounces of sugar, and half an ounce of saltpetre in two quarts of water. Pour the brine over the meat and let it stand for eight to ten days.
