Crumbly Kasha on Mushroom Bouillon

Ingredients

Instructions

  1. Prepare 2 glasses rice or Smolensk groats (groats rubbed with 2 eggs, dried, sieved; rice parboiled once).
  2. Boil dried mushrooms with roots and spices; chop finely and reserve 2½ glasses strained bouillon.
  3. Add onion-browned butter to the bouillon, boil, pour in groats stirring; cook over high then low heat covered.
  4. Stir out lumps, add butter and mushrooms, bake to brown lightly, and turn out.
