Tomata Soup

Ingredients
- 12 tomatoes
- clarified suet or sweet oil
- 1 small Spanish onion
- flour
- salt
- cayenne pepper
- gravy or water
- rich stock
- lemon juice
Instructions
- Take the unpeeled tomatoes, Spanish onion, and a bit of clarified suet or sweet oil. Sprinkle with flour and season with salt and cayenne pepper. Boil them in a little gravy or water, stirring constantly to prevent burning.
- Once cooked, pass the mixture through a sieve. Thin it with rich stock until it reaches the consistency of winter pea-soup. Warm it through, then flavour with lemon juice according to taste just before serving.
