Lamb and Sprew

Instructions

  1. Place the neck or breast of lamb in a stewpan and cover with water.
  2. Add the bundle of sprew cut into two-inch pieces, the celery cut small, and the onion.
  3. Season with pepper, salt, and parsley.
  4. Let simmer gently until both the meat and sprew are tender.
  5. Add a couple of lumps of sugar if desired to improve the flavor.
  6. Remove all fat as it rises.
  7. When serving, arrange the sprew around the meat and lay it thickly over the top.
