Lamb and Sprew

Ingredients
- neck or breast of lamb
- water
- sprew
- 1 small head celery
- 1 onion
- pepper
- salt
- 1 sprig parsley
- 2 lumps sugar
Instructions
- Place the neck or breast of lamb in a stewpan and cover with water.
- Add the bundle of sprew cut into two-inch pieces, the celery cut small, and the onion.
- Season with pepper, salt, and parsley.
- Let simmer gently until both the meat and sprew are tender.
- Add a couple of lumps of sugar if desired to improve the flavor.
- Remove all fat as it rises.
- When serving, arrange the sprew around the meat and lay it thickly over the top.
