A Simple White Soup

Ingredients
- 1 knuckle of veal
- chorissa
- 1 carrot
- 2 onions
- 3–4 turnips
- 1 blade mace
- 2–3 quarts water or weak broth
- salt
- 1 sprig parsley
- white pepper
- vermicelli
Instructions
- Break a knuckle of veal and place it in a stewpan along with a piece of chorissa, a carrot, two onions, three or four turnips, and a blade of mace.
- Pour over two or three quarts of water or weak broth, and season with salt, a sprig of parsley, and whole white pepper.
- Boil until sufficiently cooked. Skim and strain the soup.
- Thicken with pounded vermicelli before serving.
