A Simple White Soup

Ingredients

Instructions

  1. Break a knuckle of veal and place it in a stewpan along with a piece of chorissa, a carrot, two onions, three or four turnips, and a blade of mace.
  2. Pour over two or three quarts of water or weak broth, and season with salt, a sprig of parsley, and whole white pepper.
  3. Boil until sufficiently cooked. Skim and strain the soup.
  4. Thicken with pounded vermicelli before serving.
