Pineapple Fish

Ingredients
- 2 pounds haddock or codfish
- 1 tablespoonful syou
- 1 can preserved pineapple
- salt
- cornstarch or Quong Sang Chong
- rice
Instructions
- Clean a haddock or codfish of about two pounds and remove the bones.
- Rub the fish well with salt and place it in a fish pan.
- Cover well with boiling water and let it simmer gently for twenty minutes.
- Drain off all the water.
- Add one tablespoonful of syou and one can of preserved pineapple to the pan.
- Let this simmer slowly for fifteen minutes longer.
- Thicken the mixture with cornstarch or Quong Sang Chong.
- Serve with rice.
