Pineapple Fish

Ingredients

Instructions

  1. Clean a haddock or codfish of about two pounds and remove the bones.
  2. Rub the fish well with salt and place it in a fish pan.
  3. Cover well with boiling water and let it simmer gently for twenty minutes.
  4. Drain off all the water.
  5. Add one tablespoonful of syou and one can of preserved pineapple to the pan.
  6. Let this simmer slowly for fifteen minutes longer.
  7. Thicken the mixture with cornstarch or Quong Sang Chong.
  8. Serve with rice.
