Mushi Kujira (Boiled Whale or Bass)

Ingredients
- 2 pounds fish (whale or bass)
- 0.5 cup syou (soy sauce)
- 2 large radishes
- 2 tablespoons vinegar
- salt
- 1 dash cayenne pepper
- 0.5 orange peel
- 0.5 lemon peel
Instructions
- Remove all bones from the fish and slice it into long, thin slices.
- Cut the slices into half-inch dice.
- Sprinkle the fish with salt and let sit for about fifteen minutes.
- Cut the radishes into long, even, delicate strips.
- Boil the radishes for a few minutes, then strain.
- Add half a cup of syou sauce and two tablespoonfuls of vinegar to the radishes.
- Bring the sauce to a boil.
- Drop the fish slices into the boiling sauce.
- Bring to a boil again, then push the pot to the back of the range, cover tightly, and simmer for half an hour.
- Grate the peels of half a lemon and half an orange.
- Remove the fish to a hot platter and sprinkle the grated peels over it.
- Serve with boiled rice.
