Tembani of Mackerel

Ingredients
- 1 mackerel
- 1 fresh radish
- 1 cupful syou sauce
- vinegar
- orange or lemon peel
- 0.5 cupful cooking juice
- salt
- boiled rice
Instructions
- Clean the mackerel and remove all bones.
- Cut the fish into half-inch dice.
- Sprinkle the fish with salt and let stand for about half an hour.
- Wash the radish and cut into thin pieces.
- Throw the radish into salted boiling water and boil for about five minutes.
- Strain off all water from the radish.
- Add half a cupful of syou sauce and half a cupful of cooking juice to the radish.
- Let all boil up, then add the fish and let it simmer for about twenty-five minutes.
- Remove from the fire and add a tablespoonful of vinegar before serving.
- Place on a hot platter and sprinkle with grated lemon or orange peel.
- Serve with boiled rice.
