Tembani of Mackerel

Ingredients

Instructions

  1. Clean the mackerel and remove all bones.
  2. Cut the fish into half-inch dice.
  3. Sprinkle the fish with salt and let stand for about half an hour.
  4. Wash the radish and cut into thin pieces.
  5. Throw the radish into salted boiling water and boil for about five minutes.
  6. Strain off all water from the radish.
  7. Add half a cupful of syou sauce and half a cupful of cooking juice to the radish.
  8. Let all boil up, then add the fish and let it simmer for about twenty-five minutes.
  9. Remove from the fire and add a tablespoonful of vinegar before serving.
  10. Place on a hot platter and sprinkle with grated lemon or orange peel.
  11. Serve with boiled rice.
