Calves-Feet with Spanish Sauce

Ingredients
- 2 calves' feet
- egg
- bread crumbs
- parsley
- chalot (shallot)
- a few cloves
- a little nutmeg
- to taste pepper
- to taste salt
- 2 Spanish onions
- some truffles or mushrooms
- a little suet
- to taste cayenne
- to taste white pepper
- 1 or 2 small lumps white sugar
- good strong stock
- 1 wine glass Madeira wine
- a little lemon juice
Instructions
- Clean, boil, and split two fine calves' feet. Mix egg and bread crumbs together with chopped parsley, chopped shallot, ground cloves, nutmeg, pepper, and salt. Dip the prepared feet into this mixture and fry them until a fine brown color is achieved. Arrange them in the serving dish.
- For the sauce: slice two fine Spanish onions and place them in a saucepan with chopped truffles or mushrooms, a little suet, cayenne, white pepper, salt, and one or two small lumps of white sugar. Simmer all together in good strong stock until the gravy has nearly boiled away.
- Stir in a wine glass of Madeira wine and a little lemon juice. Return the sauce to the saucepan and make it thoroughly hot before serving. Pour the sauce over the prepared calves' feet.
