Steamed Duck

Ingredients

Instructions

  1. Clean the duck thoroughly inside and out.
  2. Cut down the breast, dry it well, and rub thoroughly with salt.
  3. Lay the duck in a bowl.
  4. Chop one quarter pound of pork fine.
  5. Cut one quarter pound of mushrooms small and slice one quarter pound of water chestnuts thin.
  6. Boil one quarter pound of barley for ten minutes, adding half a tablespoonful of syou and a teaspoonful of salt.
  7. Mix together the pork, mushrooms, water chestnuts, and cooked barley.
  8. Fill the duck with the mixture and sew or skew it up.
  9. Steam for three hours.
  10. Serve with rice.
