Steamed Duck

Ingredients
- 3.5 pounds duck
- 0.25 pound pork
- 0.25 pound mushrooms
- 0.25 pound water chestnuts
- 0.25 cup barley
- 1.5 tablespoonfuls syou
- 1 teaspoonful salt
Instructions
- Clean the duck thoroughly inside and out.
- Cut down the breast, dry it well, and rub thoroughly with salt.
- Lay the duck in a bowl.
- Chop one quarter pound of pork fine.
- Cut one quarter pound of mushrooms small and slice one quarter pound of water chestnuts thin.
- Boil one quarter pound of barley for ten minutes, adding half a tablespoonful of syou and a teaspoonful of salt.
- Mix together the pork, mushrooms, water chestnuts, and cooked barley.
- Fill the duck with the mixture and sew or skew it up.
- Steam for three hours.
- Serve with rice.
