Hop Ho Gai Din (Fried Chicken with Almonds or Walnuts)

Ingredients
- 2.5 pounds chicken breast
- 2 tablespoonfuls olive oil
- 1 cupful Chinese almonds or walnuts
- 2 stalks celery
- 1 teaspoonful onion juice
- 2 tablespoonfuls syou
- 0.25 pound white mushrooms
- Quong Sang Chong
Instructions
- Cut only the breast meat of a young chicken into small tubes.
- Fry the chicken pieces to a golden brown in two tablespoonfuls of olive oil.
- Prepare a cupful of blanched and chopped almonds or walnuts, half a pound of small white mushrooms cut up small, one teaspoonful of onion juice, and two tablespoonfuls of syou.
- Add the almond and mushroom mixture to the fried chicken.
- Simmer together for half an hour.
- Thicken the dish with Quong Sang Chong.
- Garnish with a border of nuts before serving.
