Gai Grun Yung Waa (Bird's-nest Soup)

Ingredients

Instructions

  1. Boil the bird's nest for one hour.
  2. Drain the bird's nest and place it in cold water.
  3. Pound the cooked chicken meat finely so there are no large or hard pieces.
  4. Add one cupful of cold stock to the pounded chicken meat.
  5. Remove the bird's nest from the cold water and drain it well.
  6. Add the drained bird's nest to the soup stock and boil for half an hour.
  7. Add the chicken meat mixture to the pot.
  8. Finely crumble the boiled egg and add it to the soup.
  9. Remove the soup from the fire as soon as it begins to boil again.
  10. Before serving, sprinkle the minced ham on top.
