Gai Grun Yung Waa (Bird's-nest Soup)

Ingredients
- 0.5 pound bird's nest
- 1 pint chicken stock
- 0.25 pound cooked breast of chicken
- 1 boiled egg
- 0.25 pound minced ham
- 1 teaspoon salt
Instructions
- Boil the bird's nest for one hour.
- Drain the bird's nest and place it in cold water.
- Pound the cooked chicken meat finely so there are no large or hard pieces.
- Add one cupful of cold stock to the pounded chicken meat.
- Remove the bird's nest from the cold water and drain it well.
- Add the drained bird's nest to the soup stock and boil for half an hour.
- Add the chicken meat mixture to the pot.
- Finely crumble the boiled egg and add it to the soup.
- Remove the soup from the fire as soon as it begins to boil again.
- Before serving, sprinkle the minced ham on top.
