Belozersk Snetki (Dried Smelt) Soup

Ingredients
- funt snetki
- parsley root
- celery
- onion
- bay leaf
- pepper
- stakan buckwheat grits
- lozhka butter
- stakan cream
Instructions
- Wash the snetki well and let stand.
- Boil and strain a root bouillon; cook buckwheat grits with butter in it until nearly soft.
- Add the snetki, boil, skim, add cream, boil, and serve.
