Belozersk Snetki (Dried Smelt) Soup

Ingredients

• 3 funt snetki
• 1/2 parsley root
• 1/2 celery
• 1 onion
• bay leaf
• pepper
• 1/2 stakan buckwheat grits
• 1 lozhka butter
• 1 stakan cream

Instructions

1. Wash the snetki well and let stand.
2. Boil and strain a root bouillon; cook buckwheat grits with butter in it until nearly soft.
3. Add the snetki, boil, skim, add cream, boil, and serve.
