Barley Jelly

Ingredients
- 1 tea-cup pearl barley
- 2 quarts cold water
- white sugar
- 1 lemon
- a little white wine
- 1/4 ounce isinglass
Instructions
- Boil one tea-cup of pearl barley in an iron saucepan with one quart of cold water. When it comes to a boil, pour off that water and add a fresh quart.
- Let the barley simmer very gently for three hours over or near a slow fire, stirring frequently with a wooden spoon.
- Strain the barley through a sieve. Sweeten with white sugar to taste, then add the juice of a lemon and a little white wine.
- Dissolve the isinglass in a little water, then stir it into the barley liquid. Pour into a mold and let set until firm.
