Fricondelles

Ingredients
- cold veal or poultry
- 1 whole French roll
- seasonings and ingredients
- crumbs of bread
- weak gravy
- well thickened sauce
Instructions
- Prepare cold veal or poultry according to the previous receipt. Instead of bread crumbs, incorporate a French roll that has been soaked in white gravy. Mix in the same seasonings and ingredients as before.
- Form the mixture into two shapes to imitate small chickens or sweetbreads. Sprinkle the outside with bread crumbs.
- Place in a frying-pan as deep as a shallow saucepan. Fry until the fricondelles become set. Pour in enough weak gravy to cover them, then let them stew gently.
- Transfer both fricondelles to a serving dish and pour over a well-thickened sauce of your selection.
