Instructions

  1. Prepare cold veal or poultry according to the previous receipt. Instead of bread crumbs, incorporate a French roll that has been soaked in white gravy. Mix in the same seasonings and ingredients as before.
  2. Form the mixture into two shapes to imitate small chickens or sweetbreads. Sprinkle the outside with bread crumbs.
  3. Place in a frying-pan as deep as a shallow saucepan. Fry until the fricondelles become set. Pour in enough weak gravy to cover them, then let them stew gently.
  4. Transfer both fricondelles to a serving dish and pour over a well-thickened sauce of your selection.
