Lobster Chow Main

Ingredients
- 1 pound lobster meat
- 2 eggs
- 0.5 pound noodles
- 3 stalks celery
- 1 can bamboo shoots
- 1 onion
- 0.25 pound mushrooms
- 1 tablespoon sweet lard
- 1 quart peanut oil
- 3 water chestnuts
Instructions
- Hard-boil the eggs and set aside.
- Heat the peanut oil until it boils.
- Add the noodles to the hot oil and cook until crisp.
- Remove the noodles and drain thoroughly.
- Heat a teaspoon of sweet lard in a frying pan.
- When the lard is hot, add half the cooked lobster meat and cook for a few minutes.
- Add the onion, mushrooms, and water chestnuts to the pan.
- Add the bamboo shoots last and fry all ingredients together for ten minutes.
- On a hot platter, spread the crisp noodles as a layer at the bottom.
- Arrange the fried ingredients on top of the noodles.
- Place the remaining half of the lobster meat in a layer on top.
- Garnish with shredded yolks of the hard-boiled eggs.
