Rice Fritters

Instructions

  1. Boil half a pound of rice in a small quantity of water until it reaches a jelly-like consistency. Let it cool completely. Beat the cooked rice together with six eggs, three spoonsful of flour, and a little grated lemon peel until well combined. Fry the mixture like fritters in either butter or oil. Serve with white sugar sifted over the top.
