An Old Way of Pickling Cucumbers

Ingredients
- cucumbers
- salt
- vinegar
- cayenne pepper
- ginger
- pepper
- mustard seed
- West India pickles
Instructions
- Cut the cucumbers into small pieces lengthways, leaving the peel on. Lay them in salt for twenty-four hours. Dry the pieces thoroughly with a cloth and place them in a deep dish.
- Boil together vinegar with cayenne pepper, whole ginger, whole pepper, and mustard seed. Allow this mixture to cool until nearly cold, then pour it over the cucumber pieces. A few West India pickles may be added if desired.
- Bottle the pickles. They are fit for eating a few days after being made and will keep good in a dry place as long as required.
