An Old Way of Pickling Cucumbers

Instructions

  1. Cut the cucumbers into small pieces lengthways, leaving the peel on. Lay them in salt for twenty-four hours. Dry the pieces thoroughly with a cloth and place them in a deep dish.
  2. Boil together vinegar with cayenne pepper, whole ginger, whole pepper, and mustard seed. Allow this mixture to cool until nearly cold, then pour it over the cucumber pieces. A few West India pickles may be added if desired.
  3. Bottle the pickles. They are fit for eating a few days after being made and will keep good in a dry place as long as required.
