Orange Jelly

Ingredients

• 1 quart water
• 1 ounce isinglass
• 1 lemon peel
• 1 orange peel
• 1 lemon juice
• 6 oranges, juice
• 0.5 pound white sugar
• 1 Seville orange

Instructions

1. Simmer the isinglass in the water. Add the peel of one lemon and one orange. When the isinglass is dissolved, add the juice of a lemon and six fine oranges. Sweeten with half a pound of white sugar. If the oranges lack flavor, add a Seville orange. (Quantity must vary according to the season.)
