Apple Sauce for Goose
Origin: London, England
Source: Anonymous, 1846
Ingredients
- apples
- a little water
- a little powdered sugar
Instructions
- Slice the apples and put them in a little water. Simmer until soft, then beat them to a pulp.
- Some cooks prefer to add a little powdered sugar for sweetness, but the acidity of the apples is traditionally valued as a corrective to the richness of goose, so the sauce is usually preferred without sugar.
