Pickled Gherkins and French Beans

Ingredients

Instructions

  1. Choose fine, fresh gherkins and soak them in brine for one week. Drain them thoroughly.
  2. Prepare boiling vinegar infused with the usual pickling spices. Cover the drained gherkins with fresh green vine leaves, then pour the boiling vinegar over them.
  3. If the pickled gherkins do not appear to be a fine green colour, pour off the vinegar and boil it up again. Cover the gherkins with fresh green vine leaves once more and pour the vinegar over them again.
  4. French beans are pickled in exactly the same manner.
