Mushi Ahiru (Baked Duck)

Ingredients

Instructions

  1. Clean and singe the duck and wash in lukewarm water.
  2. Wipe dry with a clean cloth.
  3. Rub well with salt.
  4. Cut the duck in pieces.
  5. Make a batter of kudzu starch and eggs, about the thickness of fritters.
  6. Dip each piece of duck in the batter.
  7. Lay the battered pieces in an oiled pan.
  8. Bake in a slow oven for two hours.
  9. While the duck bakes, chop the giblets very fine.
  10. Put the chopped giblets in a pot with a cupful of water, a cupful of soy sauce, salt, pepper, and a teaspoonful of sugar.
  11. Boil the gravy slowly while the duck is baking.
  12. Place the well-browned duck on a platter.
  13. Pour the gravy over the duck.
  14. Garnish with grated orange or lemon peel.
