Waflers

Ingredients
- 1.5 cup thick yeast
- warm milk
- 2 pounds flour
- 1 pound fresh butter
- 10 eggs
- 1 nutmeg, grated
- 0.25 pint orange flower-water
- cinnamon, powdered
- 3 pints warm milk
Instructions
- Mix the thick yeast with a little warm milk and two pounds of flour. Set this mixture before the fire to rise.
- Once risen, mix in the fresh butter, ten eggs, grated nutmeg, orange flower-water, and a little powdered cinnamon. Add three pints of warm milk and stir until the batter is perfectly smooth.
- Butter the wafer irons well. Fill them with batter and close them down tightly. Place them between the bars of a bright clear fire. When sufficiently done, the wafles will slip easily out of the irons.
