Ingredients

Instructions

  1. Mix the thick yeast with a little warm milk and two pounds of flour. Set this mixture before the fire to rise.
  2. Once risen, mix in the fresh butter, ten eggs, grated nutmeg, orange flower-water, and a little powdered cinnamon. Add three pints of warm milk and stir until the batter is perfectly smooth.
  3. Butter the wafer irons well. Fill them with batter and close them down tightly. Place them between the bars of a bright clear fire. When sufficiently done, the wafles will slip easily out of the irons.
