Fried Rice with Chicken and Mushrooms

Ingredients
- 1 pound rice
- 1 pound cooked chicken flesh
- 1 pound fresh white mushrooms
- 2 stalks celery
- 1 whole onion
- 6 whole water chestnuts
- 1 tablespoon pork fat
- 2 tablespoon syou
- dash cayenne pepper
- 1 teaspoon salt
Instructions
- Boil one pound of rice for twenty minutes.
- Cut one pound of cooked chicken into small pieces.
- Heat a tablespoon of pork fat in a pan until very hot.
- Add the chicken to the hot fat and fry for a few minutes.
- Cut up two stalks of celery, one onion, and six water chestnuts.
- Add the cut vegetables to the pan along with the syou, cayenne, and salt.
- Fry all together for ten minutes.
- Place the rice in a platter and pour the chicken and vegetable mixture over it.
- Cover tightly and let it soak through the rice thoroughly.
- Garnish with chopped parsley and serve.
