Fried Rice with Chicken and Mushrooms

Ingredients

Instructions

  1. Boil one pound of rice for twenty minutes.
  2. Cut one pound of cooked chicken into small pieces.
  3. Heat a tablespoon of pork fat in a pan until very hot.
  4. Add the chicken to the hot fat and fry for a few minutes.
  5. Cut up two stalks of celery, one onion, and six water chestnuts.
  6. Add the cut vegetables to the pan along with the syou, cayenne, and salt.
  7. Fry all together for ten minutes.
  8. Place the rice in a platter and pour the chicken and vegetable mixture over it.
  9. Cover tightly and let it soak through the rice thoroughly.
  10. Garnish with chopped parsley and serve.
