Egg Plant

Ingredients

Instructions

  1. Cut one large egg plant into slices, not too thin.
  2. Soak the slices for two hours in cold water with a handful of salt.
  3. Drain thoroughly.
  4. Pour over the egg plant a little vinegar mixed with water, and let it lie in this for about half an hour.
  5. Drain thoroughly again.
  6. Pour over it two cupfuls of hot vinegar mixed with one dessert-spoonful of mixed spices and one cup of sugar.
  7. Cover tight and put away for at least twenty-four hours.
