Egg Plant

Ingredients
- 1 large Egg plant
- 2 cups Vinegar
- 1 dessert-spoonful Mixed spices
- 1 cup Sugar
- 1 handful Salt
Instructions
- Cut one large egg plant into slices, not too thin.
- Soak the slices for two hours in cold water with a handful of salt.
- Drain thoroughly.
- Pour over the egg plant a little vinegar mixed with water, and let it lie in this for about half an hour.
- Drain thoroughly again.
- Pour over it two cupfuls of hot vinegar mixed with one dessert-spoonful of mixed spices and one cup of sugar.
- Cover tight and put away for at least twenty-four hours.
