Strawberry Jam

Instructions

  1. Bruise the strawberries gently with the back of a wooden spoon. Boil them with very little water for twenty minutes, stirring until the fruit and juice are well mixed.
  2. Add powdered loaf sugar equal in weight to the fruit. Simmer for half an hour longer. If you prefer a less rich preserve, use half the weight of sugar in proportion to the fruit, but additional boiling will be required.
  3. This same method may be used to make raspberry, currant, gooseberry, apricot, and other jams.
