Strawberry Jam

Ingredients
- 6 pounds fresh strawberries
- water
- 6 pounds powdered loaf sugar
Instructions
- Bruise the strawberries gently with the back of a wooden spoon. Boil them with very little water for twenty minutes, stirring until the fruit and juice are well mixed.
- Add powdered loaf sugar equal in weight to the fruit. Simmer for half an hour longer. If you prefer a less rich preserve, use half the weight of sugar in proportion to the fruit, but additional boiling will be required.
- This same method may be used to make raspberry, currant, gooseberry, apricot, and other jams.
