Yaki Zakana (Fried Fish)

Ingredients
- small fish
- salt
- peanut oil, goma-seed oil, or olive oil
- oil-fried Tofu
- lemon peel
- rice
Instructions
- Wash the fish and scale it if necessary, removing all fins.
- Rub the fish well with salt.
- Have ready a deep iron pot and add peanut oil, goma-seed oil, or olive oil—enough to prevent burning but not excessive.
- Lay the fish in the pan without crowding one on top of another.
- Fry the fish to a light brown, turning carefully so as not to break it.
- Place each fried fish on a cake of oil-fried Tofu about the length of the fish.
- Sprinkle the fish with grated lemon peel.
- Serve very hot with rice.
