Yaki Zakana (Fried Fish)

Ingredients

Instructions

  1. Wash the fish and scale it if necessary, removing all fins.
  2. Rub the fish well with salt.
  3. Have ready a deep iron pot and add peanut oil, goma-seed oil, or olive oil—enough to prevent burning but not excessive.
  4. Lay the fish in the pan without crowding one on top of another.
  5. Fry the fish to a light brown, turning carefully so as not to break it.
  6. Place each fried fish on a cake of oil-fried Tofu about the length of the fish.
  7. Sprinkle the fish with grated lemon peel.
  8. Serve very hot with rice.
