Spiced Beef

Ingredients
- 1 thick piece of brisket of beef, not fat
- pickle
- equal parts ground all-spice
- equal parts black pepper, ground
- equal parts cloves, ground
- equal parts ginger, ground
- equal parts nutmegs, ground
- a little brown sugar
- dried sweet herbs, pounded
- very little water
Instructions
- Let the beef lay in pickle for three days. Remove it from the pickle and rub in a mixture of equal quantities of ground all-spice, black pepper, cloves, ginger, and nutmegs, combined with a little brown sugar. Repeat this rubbing daily for a week. Cover the beef with pounded dried sweet herbs. Roll or tie it tightly. Put it into a pan with very little water and bake slowly for eight hours. Remove it from the oven, untie it, and place a heavy weight upon it. This is a fine relish when eaten cold.
