Grenki with Prune Marmalade

Ingredients
- funt French prunes
- piece cinnamon
- glass sugar
- funt white bread
- butter
Instructions
- Boil and pit 1/8 funt prunes, simmer soft with cinnamon, rub through a sieve; cook to a marmalade in a syrup of 1/4 glass sugar and 1/2 glass water.
- Slice/brown white bread (or lightly buttered rusks) on one side.
- Sandwich the marmalade between two croutons, dust with sugar, brown both sides in a hot oven.
- Make a prune syrup (pounded stones + 1/8 funt prunes + 1/4 glass sugar, reduced to 1 1/2 glasses, strained); pour over to serve.
