Ingredients
- 1 pint rice
- 1 quart strong gravy
- 1 onion
- sweet herbs
- 1 chicken
- 4 egg yolks
- 1 lemon
- saffron
Instructions
- Stew the rice gently in the strong gravy for approximately one quart of liquid until it begins to swell. Add an onion stuck with cloves and a bunch of sweet herbs to the pot. Place the chicken, stuffed with forcemeat, into the rice and gravy. Let everything stew together until the chicken is thoroughly done and the rice is cooked through.
- Remove the chicken from the pot. Stir the rice and mix in the yolks of four eggs and the juice of a lemon. Color the rice to a fine yellow with saffron.
- Serve the fowl in the same dish with the seasoned rice.
